This study aims to evaluate the impact of advanced process control on the standardization of sugar concentration during the preparation of fermentative must in the sugar and ethanol industry. The study compared traditional control with an advanced control system, using specific software to model the process and control. Two distinct scenarios were analyzed: one
with the presence of clarified juice and another using only water and molasses. The methodology included data collection using a densimeter to measure the must density and statistical analysis of the data with appropriate software. The results showed that advanced control provided a significant reduction in the variability of sugar concentration in both scenarios analyzed. Advanced control led to greater accuracy in maintaining the desired sugar concentration compared to traditional control, which exhibited higher variability and values outside the stipulated limits. It is concluded that advanced control enhances the accuracy and consistency of fermentable wort preparation, proving to be more efficient than traditional control. The reduction in variability and range of analyzed values underscores the positive impact of applying advanced control in industrial process automation. Continued research and exploration of related processes are recommended to promote technological advances in the sugar and ethanol industry.
