This work aimed to analyze and discuss topics, data and information in the Brazilian and international coffee market. Considering the economic, social and cultural importance that coffee represents for Brazil, research sources such as articles, magazines, congresses and books were consulted, seeking to make a bibliographic review of the relevant topics on the subject. Changes in the coffee market in Brazil and in the world were analyzed, highlighting the emergence of niche coffee consumption, especially the specialty coffee market. This greater demand for quality beans is a reflection of the physical, chemical and sensory characteristics that are attributed and evaluated for each type of coffee. There has been an increase in the market for better quality coffees, causing producers to adapt to this new demand, seeking improvements and updates in the entire production process.
