Resumo

Coffee plays a major role in the Brazilian economic system, being one of the main products of the national agribusiness sector and highly relevant to both the domestic market and exports. Beyond Brazil, coffee is also a globally significant commodity, with the main producing countries being Brazil, Vietnam, Colombia, Indonesia, and Ethiopia. In Brazil, the most commonly cultivated species are Arabica coffee (Coffea arabica) and Robusta or Conilon coffee (Coffea canephora). The quality of the final beverage is influenced by factors ranging from bean harvesting to post-processing stages, such as roasting and grinding. In general, coffee processing consists of the following stages: harvesting, preparation, drying, storage, roasting, grinding, packaging, and commercialization. Given the importance of this sector, there is a growing need to adopt sustainable practices throughout the coffee supply chain, which has driven the implementation of sustainability indicators capable of measuring environmental, social, and economic impacts, thereby promoting greater transparency and efficiency in production processes. In this context, the Industry 5.0 perspective has gained prominence by integrating advanced technologies with human-centered values and sustainability principles. This approach enables more accurate monitoring, supports strategic decision-making, and contributes to the development of a more resilient production chain that is better aligned with the needs of society and the environment.
